Begin the class by preparing a savory grilled eggplant dish highlighting regional Mediterranean ingredients, such as crumbly feta cheese, fresh herbs and rich olive oil. Next, cook a bold and colorful main course of sautéed scallops with mashed purple potatoes, bright chimichurri and mango chutney inspired by the vibrant flavors of Spain. Finish the meal with a decadent chocolate cherry dessert reminiscent of the Black Forest.
